Deeplant, a company developing a data analysis system using meat deep-aging technology, has secured a seed investment from the accelerator CNT Tech.
Deeplant has developed its own "Deep-Aging System," an equipment that physically ages meat by combining water pressure, ultrasound, and temperature. A key feature of this system is that it shortens the aging time by about half compared to conventional methods while making the meat approximately 70% more tender than before aging and 30-50% more tender than conventionally aged meat. It also increases water-holding capacity by 30-50% compared to conventional aging, making the meat enjoyable for various age groups.
Furthermore, by analyzing the data accumulated from aging various meat cuts with the Deep-Aging System, Deeplant collects and utilizes optimal aging data for each type and cut. This enables them to bring meat to a consistent level of quality, regardless of the distribution of its protein and fat tissue, achieving sufficient flavor and a soft texture even with less-preferred cuts.
Kim Cheol-beom, CEO of Deeplant, stated, "We plan to focus on diversifying sales channels by launching our own aged meat brand, 'Delish Meat,' on major online distribution channels and through Wadiz crowdfunding to make aged meat easily accessible to the public."
Jeon Hwa-seong, CEO of CNT Tech, commented, "Aged meat is establishing itself as a new meat trend because it can produce rich flavor even from leaner cuts, overturning the stereotype that good meat must have brilliant marbling and dense fat." He added, "In this market, we will provide comprehensive support for their technology development so that various value-added products can be created with Deeplant's unique deep-aging technology."
