1. Enhancement of Meat Quality

Data-Driven Deep Aging® System

Deeplant's patented data-driven Deep Aging Technology

activates the action of enzymes naturally found in meat, accelerating protein decomposition without chemical additives, and maximizing the production of flavor substances to keep meat fresh even in a short period of time. It is a new technology that makes it tender and rich in flavor and juiciness .

Instead of using any chemical additives to tenderize meat, the Deep Aging system accelerates the natural maturation of the meat itself by applying a physical environment of Deep Aging.


​Through this patented technology, consumers who enjoyed eating meat depending on fat, such as marbling, can experience a tender and flavorful taste even in non-preferred parts that are not consumed due to low marbling or low fat content. By completely consuming all processed parts of animals in this way, we can reduce the amount of meat that is discarded without being consumed.

By applying this technology, healthy low-fat, high-protein meat products are being produced for consumers, or they are being developed as elders-friendly products for elderly people who have difficulty eating meat.

Tenderness, flavor, and freshness prediction system using artificial intelligence

​Deeplant's AI prediction technology is also a new technology that has never been tried before. Breaking away from the traditional method of judging the quality of meat only by grade, artificial intelligence predicts the taste and condition of meat through deep learning learning. We aim to lead a consumer-centered meat industry where consumers can directly choose the softness, taste, and flavor of meat they want.


2. ESG-related Technologies

Waste Blood Resource Technology

Cell culture technology research is being conducted by many pharmaceutical companies and research institutes in the wake of the COVID-19 incident. And cultured meat, which aims to solve future food problems, is also attracting attention as a new business field. However, such cell culture research requires cell culture media or serum, and the most commonly used serum is obtained from bovine fetuses (Fetal Bovine Serum; FBS). However, there have been the ethical issues to obtain it from unborn fetuses and the price has risen due to low demand. Moreover, Korean FBS relies entirely on imports.

Among the slaughter by-products generated at slaughterhouses, a very small amount of blood is used as food, and the rest is disposed of. If the discarded waste blood is recycled, import costs of over 1 billion won per year can be saved, and the annual cost of blood waste exceeds approximately 16.6 billion won. Economic effects can be expected to reduce costs.

At Deeplant, the technology to manufacture cell culture media and serum necessary for cell culture research by recycling waste blood generated from slaughterhouses was transferred from Professor Heo Seon-jin of Chung-Ang University's Industry-Academic Cooperation Foundation and is continuing research. In the future, we are working on industrialization by researching and designing mass production systems not only for domestic use but also for export.
